Chef John Taube
After working together during our Tastemaker pilot with the NoMad, we collaborated with Chef John Taube as he prepared to compete for the title of 2018 San Pellegrino Young Chef. This competition brings together the world’s top upcoming talent, with Chef John representing the US after winning the regional title.
Each competitor is tasked with creating a dish that represents the chef on a plate. Chef John’s dish “Squab and a Beet” was inspired by his father, who for his regional competition cultivated beets using a home hydroponic system. For the global competition, Chef John reached out to SproutsIO to assist in cultivating more soil-free beets to his exact flavor specifications.
After months of careful planning and refinement, Chef John traveled to Milan with beets grown using our hybrid hydroculture technology. Chef John’s dish was a favorite of "The Seven Sages" - a judging panel of elite chefs Virgilio Martínez, Margarita Forés, Brett Graham, Annie Féolde, Dominique Crenn, Ana Roš and Paul Pairet.
